  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 2 tablespoons melted butter
  • Additional butter or oil for cooking

  • Nutmeg

  • Chives

Instructions:

  1. In a large mixing bowl, whisk together rye flour, all-purpose flour, baking powder, baking soda, salt, and sugar.
  2. In a separate bowl, beat the eggs and then add buttermilk and melted butter. Mix well.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are okay.
  4. Heat a skillet or griddle over medium heat and add a small amount of butter or oil.
  5. Scoop about 1/4 cup of batter onto the hot surface for each blini. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
  6. Repeat until all the batter is used, adding more butter or oil to the pan as needed.
